Why Are Commercial Kitchen Floors So Slippery?
Commercial kitchen floors are slippery because they combine heavy, constant contamination, grease, water, food debris and cleaning residue, with a surface whose actual slip resistance has often never been measured. A floor can look clean and still fail to grip properly once it’s
wet or greasy, because looking clean and being safe are two different things.
The short why
Kitchens generate contamination faster than almost any other commercial environment. Add fast paced service, staff moving quickly between stations, and floors that were sometimes chosen for appearance or cost rather than tested performance, and the conditions for a slip are
built in from the start. Cleaning helps, but it doesn’t automatically solve the underlying problem.
What actually drives the risk
We use a framework called CHIMES to explain what makes any floor slippery, and commercial kitchens tend to score badly on several factors at once.
- Contamination: grease, water, food waste and cleaning product residue are present almost constantly during service.
- Heel: kitchen footwear varies widely between sites and staff, and not all of it is suited to the actual conditions underfoot.
- Individual: staff working at pace, often carrying items with both hands, have less capacity to notice or avoid a wet patch.
- Maintenance: cleaning frequency, products and methods all affect whether contamination is genuinely removed or just moved around.
- Environment: poor lighting, awkward transitions between kitchen and service areas, and spills near fryers or ice machines all add risk.
- Surface: the floor itself may never have been specified or tested with kitchen conditions in mind.
Most kitchens are reasonably good at managing contamination and maintenance, because that’s the visible part. Surface, the factor that determines whether the floor can actually be walked on safely once it’s wet, is usually the one nobody has measured.
Why looks clean does not mean safe
It’s a natural assumption. If a floor has just been mopped and looks spotless, it feels like the job is done. But slip resistance is a property of the floor surface itself, not of how recently it was cleaned. A floor can be wiped thoroughly and still have poor grip underneath, especially
if grease has worked its way into the texture of the flooring over months of use, or if the cleaning product used leaves a film behind. The only way to know whether a kitchen floor is actually safe is to test it directly. A pendulum test measures how a standard test foot interacts with the floor surface under realistic wet conditions, producing a Pendulum Test Value, or PTV. That number tells you that looking at the floor cannot.
The cost of not knowing
Slip incidents in hospitality environments carry real costs, both in claims and in disruption to a busy site. Organisations that shift from assuming their kitchen floors are safe to actually measuring and improving slip resistance typically see incident reductions of 57 percent or
more, based on data from Slip Safety Services across thousands of sites. That’s the practical value of testing over guessing.
What to do about it
Start with the floors that matter most, usually the busiest kitchen and back of house areas across your sites. Get them tested with a proper pendulum test rather than relying on how they look or feel underfoot. Use the result to decide whether the issue is the floor itself, the
cleaning routine, or both, and build a simple retesting schedule so you know if conditions change over time.
