What Is the Best Flooring for a Commercial Kitchen?
There is no single best flooring for every commercial kitchen. The right floor is one whose slip resistance has actually been tested and matched to that specific kitchen’s contamination levels, footwear and layout, rather than chosen because it’s labelled non slip or looks like a safe option. Best is a measured fit, not a fixed product.
The short why
Every commercial kitchen faces a different mix of grease, water, food debris and foot traffic. A floor that performs well in a low contamination dining kitchen can perform poorly in a high volume fry station. Choosing flooring based on a general reputation for being non slip, without testing it in your own conditions, is a guess dressed up as a decision.
What actually determines whether a floor works
We use a framework called CHIMES to explain what drives slip risk on any floor, and it’s just as useful when choosing new flooring as it is when assessing an existing one.
- Contamination: how much grease, water and food debris the floor will realistically face during service.
- Heel: the footwear staff actually wear, since a floor’s grip depends on the interaction between the surface and the shoe.
- Environment: layout, drainage, lighting and how quickly spills can be seen and dealt with.
- Surface: the floor’s measured slip resistance under wet or contaminated conditions, not its marketed description.
A floor that scores well on paper for one of these factors can still fail in practice if the others aren’t accounted for. This is why flooring decisions made purely on supplier claims or appearance often disappoint once the kitchen is actually in use.
Why “non slip” labelling is not enough
Many flooring products are marketed as slip resistant or non slip, and some genuinely perform well. The problem is that a label doesn’t tell you how that floor will behave under your specific contamination, with your specific footwear, in your specific layout. It also doesn’t tell you how that performance changes over time as the surface wears.
This is the same trap as assuming a floor is safe because it looks clean. A label or a clean appearance both create confidence without actually proving anything. The only way to know how a floor genuinely performs is to test it directly, using a pendulum test that measures grip under realistic wet conditions and produces a Pendulum Test Value, or PTV.
Why the difference in PTV matters more than people expect
The gap between a poor and a good PTV score is larger than most people assume. Moving a floor’s slip resistance from a PTV of 24 to 36 or higher when wet is associated with a reduction in slip risk of around 50,000 times, based on Slip Safety Services testing data. That’s not a marginal improvement. It’s the difference between a floor that is genuinely dangerous when wet and one that isn’t.
This is exactly why testing matters more than the flooring’s description. Two floors can look similar and be marketed almost identically, while performing at completely different ends of that range.
What to do about it
If you’re specifying new flooring, ask for evidence of tested slip resistance under conditions similar to your kitchen, not just a general product rating. If you’re assessing an existing floor, get it tested with a pendulum test before deciding whether to replace it, since the issue may be the cleaning routine rather than the floor itself. Either way, build retesting into your plan, since flooring performance can change as it wears.
